Why
Cultured
Butter?

The Book of WHY is an ongoing collection of the decisions behind every Lowrey product, ingredient and design choice.

Butter is not
just fat.

It is flavour.

The Question

Why cultured butter?

Butter is at the centre of a butter cookie. When the recipe is simple, the butter has nowhere to hide.

That is why the type and quality of butter matter.

Cultured butter usually has a deeper and rounder flavour than regular butter. It can bring a fuller dairy aroma, a creamy character and a more developed finish.

We do not use cultured butter because the name sounds special. We use it because its flavour changes the experience of the cookie.

In a cookie with only a few ingredients, small differences become easier to notice. Butter is not simply part of the background. It is one of the main characters.

The Flavour

Cultured butter gives the cookie more depth.

A simple butter cookie depends heavily on the character of its butter. When the butter has more aroma and flavour depth, those qualities become easier to taste.

Cultured butter brings a more layered dairy flavour. It can feel rich without becoming heavy, and creamy without becoming one-dimensional.

This matters because Lowrey Butter Cookies are not designed to be loud. They are designed to be delicate, refined and quietly memorable.

The flavour should not shout.
It should stay with you.

The Idea

The butter
has to carry
the cookie.

In a simple recipe, the butter cannot rely on icing, fillings or strong spices to create interest. Its own aroma and flavour need to be clear enough to shape the entire experience.

The Three Reasons

Aroma.
Depth.
Texture.

Cultured butter contributes to the quiet richness we want in a Lowrey butter cookie.

01

Aroma

Cultured butter gives the cookie a fuller dairy aroma, especially when the tin is first opened.

02

Depth

Its flavour is rounder and more developed, helping the cookie taste rich without becoming heavy.

03

Texture

Used with the right balance of flour, corn starch, icing sugar, mixing and baking, cultured butter contributes richness and tenderness to the delicate, fine and melt-in-the-mouth finish.

has to carry

The Decision

When the recipe is simple, quality becomes louder.

Lowrey Original Butter Cookies use four ingredients: New Zealand cultured butter, flour, corn starch and icing sugar. That makes every choice more exposed.

When butter has more character, that character becomes easier to taste in a simple cookie.

New Zealand cultured butter gives us the base we want: rich, clean, creamy and distinctive, without relying on artificial butter flavouring.

It does not create the entire cookie by itself. The final flavour and delicate texture also depend on the balance of ingredients, mixing, shaping and baking.

That is why cultured butter belongs in the recipe.

Not because the name sounds better.
Because the cookie does.

Learn More

Cultured butter and regular butter are not the same.

Both can be excellent ingredients, but they differ in production, aroma and flavour. Our full guide explains what cultured butter is, how it is made and why Lowrey chooses it for butter-forward cookies.
