Why does Lowrey use New Zealand cultured butter?

Cultured butter is made from cream that is cultured before it is churned into butter. This process can create a fuller dairy aroma, a rounder flavour and a more developed finish than standard sweet-cream butter.

This matters in butter cookies because the butter is one of the main flavours in the recipe. When a cookie does not rely on thick icing, fillings or strong spices, the character of the butter becomes easier to taste.

Lowrey uses cultured butter primarily for flavour and aroma. It is not used as the basis for unverified claims about probiotics, digestion, immunity, vitamin K2, CLA or omega-3.
