Grass-fed vs grain-fed butter: what is the difference, and does grass-fed butter taste different?
The cows’ diet can influence butter colour, flavour, fatty-acid composition, firmness and baking behaviour. Yet dairy farming rarely fits into a simple “only grass” or “only grain” division. Pasture, conserved forage and supplementary feed may all form part of a responsible feeding system.

Grain-fed butter usually refers to milk from systems using a greater proportion of grain, maize silage, concentrates or total mixed ration. What does grass-fed butter mean?
Grass-fed butter is made from milk supplied through a dairy feeding system that meets a stated grass or forage requirement.
Depending on the standard, recognised grass-fed feed types may include:
- Fresh pasture
- Grass and clover
- Hay
- Grass silage
- Approved forage crops
Grass-fed does not necessarily mean that cows eat only fresh green grass every day of the year. Weather, pasture availability, animal welfare and seasonal conditions may require conserved forage or limited supplementary feed.
What does grain-fed butter mean?
Grain-fed butter is usually an informal description rather than one universal regulated category.
It commonly refers to butter made from milk produced in feeding systems where cows receive a greater proportion of:
- Grain
- Maize silage
- Protein concentrates
- Commercial supplementary feed
- Total mixed ration, often abbreviated to TMR
This does not necessarily mean that the cows never eat grass. Many dairy farms use a combination of pasture, silage, grain and supplementary feed. Feeding systems exist on a spectrum rather than as two completely separate categories.
New Zealand’s grass-fed dairy standard
New Zealand’s Ministry for Primary Industries has established a voluntary administrative standard that provides a national definition for grass-fed dairy claims.
Under the dairy standard:
- Recognised grass-fed feed types must make up, on average, at least 90% of the diet of dairy animals supplying the relevant milk pool.
- The animals must have access to pasture for at least 340 days of the year.
- Pasture access must be available for at least eight hours per day on those days.
- Temporary removal from pasture may be permitted for animal management, adverse weather or environmental protection.
The standard is voluntary. It provides a framework for supporting a New Zealand grass-fed claim, but it does not mean that every dairy product made in New Zealand is automatically certified under the standard.

Why can grass-fed butter look more yellow?
Pasture contains carotenoids, including beta-carotene. Some of these naturally occurring pigments can pass into milk fat and contribute to a more yellow butter colour.
Colour is not proof by itself. The appearance of butter is also affected by season, pasture species, cow breed, stage of lactation, butter composition, processing and storage.
A deeper yellow tone may therefore be consistent with a pasture-based feeding system, but it does not independently prove grass-fed status, certification or overall quality.
Does grass-fed butter taste different?
Taste remains partly personal. Feeding systems can affect milk-fat composition and some aroma compounds, and controlled studies have found sensory differences between pasture-derived and total mixed ration-derived butter.
However, flavour also depends on:
- Whether the cream is cultured
- Freshness
- Salt level
- Milk quality
- Butterfat and water content
- Churning and washing
- Storage conditions
Some people prefer a pronounced pasture-derived dairy character. Others prefer a milder, more uniform butter. Grass-fed is an important origin and production attribute, but it is not a universal flavour ranking.
Is grass-fed butter healthier?
Pasture-based feeding can produce measurable differences in the fatty-acid and carotenoid composition of butter. The exact result varies with the feeding system, pasture allowance, season and the butter being tested.
These compositional differences should not be converted into broad medical promises. Both grass-fed and grain-fed butter remain:
- Concentrated sources of energy
- High in total fat
- High in saturated fat
- Foods normally used as part of a wider diet
A brand should not describe butter or butter cookies as treating heart disease, reducing inflammation, improving immunity or providing a major source of omega-3 without appropriate product-specific evidence and compliant nutrition or health claims.

Grass-fed
Describes the cows’ feeding system and the pasture-based origin of the milk.
Cultured
Describes how cultures are used to develop the cream before it is churned into butter.
Both together
A butter can be grass-fed and cultured, combining pasture-based dairy origin with developed dairy flavour.
Culturing can give butter a deeper, rounder and more developed dairy aroma. Grass-fed describes where the milk comes from and how the cows were fed. One term does not automatically prove the other.

Does grass-fed butter behave differently in baking?
It can, although the difference is product-specific. Changes in fatty-acid composition may affect:
- Firmness
- Softening at room temperature
- Crystallisation
- Melting behaviour
- Creaming with sugar
- Dough spread
Feeding system is only one variable. Baking performance also depends on butterfat and water content, butter temperature, flour, starch, sugar, mixing, shaping, dough temperature and baking conditions.

Does grass-fed butter create a melt-in-the-mouth cookie?
Not by itself.
Butter contributes flavour, aroma, richness and tenderness. A delicate, melt-in-the-mouth cookie structure comes from the balance of:
